I made some shortbread yesterday. This time I added vanilla bean extract and chocolate chips. Record lectures 3 1 1. I really like the recipe I use because it’s so easy to remember. I know it has only 3.5⭐ but believe me it’s the best recipe for shortbread ever!(I don’t use semolina though) Check this recipe as well. it’s almost the same but no semolina and the quantities are doubled and have 5⭐!

Normally I use the recipe of Flour 150g : Butter 100 : Sugar 50 g but as long as it's 3:2:1 it can be anything. 30g : 20g 10g if you don't want to make much shortbread!
I like plain shortbread as well as flavoured or something added..chopped roasted almonds go really well as well. Dried cranberries, white chocolate chips, cocoa powder to make chocolate shortbread etc there are so many possibilities!

Usually, I make each ball 10g and flatten them on my palm a bit and use a folk to flatten more when I place them on the tray. It also gives them a pattern as well.
You can also cut them using cookie cutters. When the dough is ready, I normally put them in a Ziploc type resealable bag and flatten it and keep it in the fridge for 1 hour or so it's easy to cut out.
This can be a very good baking activity with children in the holiday. DDs were busy so I mixed the dough on behalf of them but DD2 cut the dough out with cookie cutters in the evening.
Vanilla Chocolate Chip Shortbread
- 150g Plain flour sifted
- 100g butter room temperature (don't soft too much)
- 50g sugar
- 40g chocolate chips
- 1 tsp Vanilla Extract
- Preheat oven to 170 and line baking paper on a baking tray
- Place plain flour, butter, sugar and vanilla extract together in a bowl and mix
- Add chocolate chips and mix again
- Divide and shape the dough with your hand and place on to the tray
- Bake in the oven for 16-18 minutes.
I made 2 batches today and divided into half. I added 40g of chocolate chips for the half and put the other half in a resealable bag and flattened then put it in the fridge.
I baked the chocolate chip ones first. They smelt delicious. They can be good little gifts for your family and friends.
DD2 made cookie cutter ones in the evening. I had a tube of chocolate pen so she decorated with it.
This is a very quick and easy baking which you can enjoy with children. You can also use a food processor to make the dough which takes less time (I do have a food processor and it is in the kitchen but can't be bothered to get it out even though I know it's much quicker to use it!?)

1-2-3-4 Cake is a classic that has been handed down from generation to generation.
It is a wonderful basic recipe that is good for any occasion such as holidays, birthdays and anytime you just want a good cake. I can remember my mother making this 1-2-3-4 cake when I was young. Try this cake on your friends and family for a delicious treat they will love. 1-2-3-4 cake recipe will quickly become one you go to time and again. You can use any kind of frosting on this cake and I have added all kinds of ingredients for variety.
1-2-3-4 Cake is an old-fashioned classic.
1 cup butter or two sticks or 16 tablespoons ( I use sweet cream butter that is unsalted)
2 cups white granulated sugar
4 eggs
3 cups sifted all-purpose flour or you can use cake flour, too. (Sift the flour first and then measure 3 cups. If using cake flour, sift it, too.)
1 teaspoon salt
3 teaspoons baking powder
1 cup milk
1 teaspoon vanilla extract
Chocolate 32259
1/2 teaspoon almond extract
Cream butter and sugar with mixer until fluffy. Add eggs, one at a time, beating after each addition. Sift the flour you have already sifted again with the salt and baking powder. Add the vanilla extract and almond extract to the creamed eggs and sugar. Alternately add milk and flour to eggs and mix just until everything is wet. Spray a 9 x 13 baking dish with cooking spray. Add your cake mixture. Cook in preheated 350 degree oven for 35 to 40 minutes until brown on top and tests done in middle. Let cool before frosting. This cake is traditionally baked in three 9 inch cake pans for about 20 minutes per layer. You can do it in the cake pans or in a bundt pan, too. It will take about 40 minutes in a bundt pan. Frost with your favorite frosting or the frosting recipe below. Enjoy!
EASY CHOCOLATE FROSTING:
1 stick butter or margarine or 1/2 cup or 8 tablespoons, softened
3 cups powdered sugar (not granulated)
1 teaspoon vanilla extract
1/2 cup 100% cocoa
1/4 cup plus 2 tablespoons milk (You can use more or less milk to get the consistency you like in the frosting)
Mix all ingredients with mixer. Spread on cake. Makes enough for 1 cake. You can double the recipe.
